Happy St. Patty's Day!

This year instead of just going to an Irish bar for some green beer, I decided to try my hand at being an Irish housewife. I had never prepared corned beef so I resorted to allrecipes.com. That website never disappoints. I think I was more confused after looking through a few recipes. Does it take 50 minutes per pound or 90 min per pound and how can a little brisket take longer to cook than a turkey at Thanksgiving? Even though I knew it would take hours, I still waited til noon to go shopping. First Ralph's stop, all out of corned beef. Do not panic. On to the next. Second Ralph's stop, before I even get to the meat department, I can see the sign, "Corned Beef SOLD OUT." Panic levels rising. Third stop, Albertsons. They were all out of the "nice" corned beef, but still had the "cheap" corned beef. Oh who cares if it is cheap, count me in! A nice old lady forced the largest brisket they had on me saying that it shrinks and the little one would never be big enough. I did not even consider at the time that larger means longer cooking time. Enough of the boring stuff, I totally winged it and it turned out wonderful. I picked a recipe that included taking the brisket out of the pot and putting it in the oven for half an hour, because my pot was not big enough for the brisket AND vegetables.
